If you want to try some really really good bread that's super good for you, definitely try this bread. Sydney (Jess' little girl) calls this "brownie bread," not because it tastes like brownies, but because it's yummy just like brownies are. So here's the recipe:
Oat & Flax Zucchini Bread
1 c canola oil
2 and 3/4 c. sugar
5 eggs
1 and 1/2 Tbl vanilla
3 c. shredded zucchini
1 and 1/2 c oat bran
1 and 1/2 c flax meal
1 c whole wheat flour
1 c white flour
1/2 Tbl baking soda
1/2 Tbl salt
1 and 1/2 Tbl cinnamon
1/2 tsp baking powder
3/4 c chopped nuts (I use pecans)
Directions:
Combine everything except the nuts. Pour into greased pans, and then sprinkle with nuts. Bake at 350. You can make two regular size loaves and bake it for 45-60 minutes. Or you can use a cookie sheet (10x15) and bake for 30-40 min. Or you can use one 9x13 and one 8x11 and bake
for 30-35 minutes. It all depends on if you want thick bread, or bread that is more like bars. Whichever way you do it, it is DELICIOUS! Enjoy!
WHOLE WHEAT CHOCOLATE CHUNK COOKIE
1 1/2 c soft butter
2 c white sugar
2 c brown sugar
3 tsp vanilla extract
4 large eggs
3 3/4 c whole wheat flour
2 c oat flour (if you don't have oat flour, use quick oats run thru the blended - It make it flour)
1/2 c flax seed flour
1 1/2 tsp baking soda
2 tsp salt
4 c chocolate chunks or chocolate chips
1 c chopped pecans (optional)
In medium bowl, cream together the butter, sugars and eggs. Combine flours in separate bowl and add slowly to sugar mixture. When blended add chocolate chunks and pecans.
Preheat oven to 375 degrees. Spray cookie sheet with cooking oil. Roll dough into balls and cook 12 minutes.
